Ingredients:

Dry Ingredients:
- 2 cups Kodiak Cinnamon Oat Power Cakes Mix
- 1 cup PES Protein Powder in Cake Pop flavor
- 1 tsp ground ginger

Wet Ingredients:
- 1 1/2 cup shredded carrots (I put mine in my ninja!)
- 1 1/4 cup unsweet almond milk
- 2 eggs
- 3/4 cup vanilla fat free Greek yogurt

Instructions:

1. Combine dry ingredients in a bowl
2. Add in wet ingredients
3. Spray muffin tins with non-stick cooking spray
4. Divide batter evenly into muffin tins
5. Bake at 350° for 20 minutes
6. Optional: Top with Protein Icing
