Ingredients:

- 200g diced potatoes o’brien
- 1/2 cup bell pepper
- 1 cup spinach
- 1 cup egg whites
- 2 turkey sausage patties
- 1/4 cup reduced fat cheese
- Garlic powder, Italian seasoning, salt & pepper to taste

Instructions:

1. Spray pan with non stick cookie spray and allow pan to heat
2. Add the potatoes & seasonings
3. While that’s cooking, microwave your Turkey sausage, chop and put aside
4. Flip the potatoes and add your fresh cut bell pepper
5. Once the potatoes start to brown, add the egg whites and turkey sausage
6. When the eggs are almost fully cooked, add the spinach and mix until the eggs are done cooking
7. Remove from heat and enjoy!

Note: for fewer calories you can reduce the amount of potatoes/eggs used. Top with your fav hot sauce or eat as is!
